Catskill Provisions, the artisanal food and craft spirits company founded in 2010, is excited to announce the re-release of its popular New York Honey Whiskey. This much-acclaimed honey infused rye is now being rectified, blended, filtered and bottled in Rochester, NY.
âAfter a long search, I finally found the ideal rye to complement our wildflower honey!â says Catskill Provisions CEO & Co-Founder Claire M. Marin. âitâs a small-batch artisanal whiskey thatâs made in South Carolina and, since Iâm committed to supporting New York state in every way I can, this meant working with a local distillerâ. Her final choice was influenced by the excellent water in the Rochester area. It comes from the Highland Reservoir, which is fed by two Finger Lakes, Hemlock and Canadice, located 25 miles south of the city. Several years ago, the State of New York, City of Rochester and the Nature Conservancy teamed up to ensure the permanent protection of these pristine lakes and the forests that surround them. The result is that Rochester has twice won âBest Tasting Water in New York Stateâ.
We recently finished producing the ninth batch of this smooth, deeply aromatic spirit, further refining and enhancing itâs rich notes of toffee vanilla and smoky spice. The new rye, combined with the award winning water and Catskill Provisionsâ late Summer wildflower honey, makes for a perfectly balanced whiskey that can be enjoyed neat, on the rocks or in a memorable cocktail. This re-released whiskey just won the Chairmanâs Trophy from Paul Pacult at the , who gave it a rating of 94, and commented: âA spicy rye kick is matched with succulent aromas of blossom honey, golden raisin, and burnt orange peel. Rye peeks through the honey, with an earthiness to balance the inherent sweetness. Toasted, nutty, and long.â
